Welcome Friday evening with a Taste of the Weekend Reception.  Guests will have the chance to see and taste what the weekend has in store with artisan hors d’oeuvres, sommelier accompanied wine stations, local olive oil tastings and cheese displays hosted by a Fromagerie.  A lavish array of desserts will be presented along with roasting s’mores while listening to the soothing sounds of the ocean.

Saturday, July 13

Visit the sustainable farming fields of Pie Ranch to harvest ingredients for a Farm Fresh Cooking Class.  This 27 acre pie shaped farm grows wheat, fruit, and vegetables, raises chickens for eggs, goats and cows for milk and butter, ingredients that will all take shape with instruction from our Chef.  Groups will get tour of the ranch and then prepare small plate dishes while learning the latest cooking techniques, experiment with indigents and satisfy your palate with unforgettable tastes.

Close the night with an In the Kitchen Dinner hosted by Executive Chef Xavier Salomon.  This interactive evening will provide front row seats to watch the creation of your meal.  Between courses talk with Chef Salomon about his passion for cooking, the creation behind the dishes and learn the seasonal focus of the menu.  Each of the four-courses will be perfectly paired with a glass of wine that accentuates the flavor of the meal.

Become a winemaker for a day.  Swirl, sniff and taste glasses of single varietal cabernet sauvignon, merlot and cabernet franc that you will blend to create a personal crafted wine.
Our blending guide will lead you through an education of grape varietals and a blending session using graduated cylinders and beakers.  Once you’ve discovered the perfect percentages of grapes to your blend, it will be bottled, corked and highlighted with a personal label and your own name brand.

Rise and shine, to start off the day at nearby Harley Farms for a Cheese Making Class.  Tour the restored 1910 dairy farm that is home to over 200 alpine goats, lush fields and pastures, and a historic barn that has become the mercantile shop.  In the garden you will learn how to make two of the most popular fresh goat milk cheeses: award winning chevre and ricotta.  See where the goats roam and when you taste the fresh cheese you have created you will taste natural ingredients that make up Harley Farms.
